Dreaming of a white Christmas

How I love Christmas, but never in my live I experience a white Christmas.
Christmas is usually a very hot day and when you hear those lovely Christmas songs sang you wish it will be snowing and cold.

I was thinking what would be a cool project to do this Christmas, and I thought why not make a snow globe cake. Wish i have more time to put light and more snow, but because this is a very small cake, somehow I can't fir those lovely LED light on it.

Simple and elegant Lisianthus wedding cake

Simple wedding cake with a lisianthus sugar flowers arrangement. The bride wanted a fresh flowers on top of her wedding cake and she requested that she wanted a champagne colour lisianthus flowers on her cake.
I met up with the lovely couple 7 months before their wedding day and knew that by November I can get some lisanthus. To my surprise I visited more then 10 florists and everyone told me that they haven't  seen any and it was hard to get them at the moment. They suggested that I should go to the flower market and may be I can get some import lisianthus.

Oh well ..I thought...what can I do ?? As most of my friends know I love making sugar flowers, so ..this is it I will try to make an arrangement of lisianthus flowers to put on top of the cake.
So here it is...

Sharp edges on fondant cake

It has become my obsession to get the sharp edge look on all my cake. I think as I made more and more cakes, I have learned the secret of getting that sharp edges look. I love how it gives the cake a smooth and sharp crisps and neat looks. I really think the secrets lies on getting the ganache smooth and even.

I still haven;t master this well yet and as a perfectionist I can still see heaps of room for improvement, but I can say I'm happy with the level and sharped look of the cake.

Flower fillers and buds.

I love creating sugar flowers for wedding cake. The colours of these flowers fillers and buds will give a lively mix to the center of the flower arrangement for the cake.
Here are some I've made for this week arrangement.

ZUMBO macarons ..macarons

Ok...the Zumbo giveaway is all done, but I still have to give a review on the Zumbo macarons mix.
I've tried the passion fruit and salted caramel mix.

My first impression when I saw the macarons mix was impressive, looks very easy to make. As most of my friends know it took me more then 3 months and a trip to Paris to master the macaron.
I was in a macron craze last year and all I do is bake and bake and try and try to make the "PERFECT MACARON" !! I've try the French ways and the Italian ways and at the end I made it....and I ate so much macarons too. Thanks to all  hubby work friends, kids friends and neighbors for eating so much of my so called "FAIL" macarons.
The recipe for macarons is very simple all you need is eggs white, sugar and almond meal,so what is the big deal??? oh well ...it a very big deal to get that PERFECT macrons, with the perfect " FEET".
On the searched of the "PERFECT macarons" I travel to Paris, the land of the macarons. I ate so much macarons that weekend I was in macarons heaven.
From the very so called cheap looking to the very sexy and elegant looking macrons dress in the shop window like an expensive jewellery store, and believed or not even McDonald on the Champs-Elysées sells macarons. I still find making macarons from scratch is the most enjoying and rewarding thing to do, and yes..I love the Italian ways of making macarons and found that even though it take longer but the taste is magnificent.

So if you love macrons and you don't want go thru the pain of mixing eggs white and the trouble of mixing and getting everything correctly the Zumbo  macarons mix is just for you.!!
I've found it was so easy and simple and the taste is ok.

Mario and Princess Peach Birthday cake

This was a very exciting cake for me. When I think of the game Mario bros, I think of my little brother and his gameboy. I never played any of the Mario games, but some how I remember the theme song or theme sound  when Mario jump and collect coins.
To do this cake I have to search or I called it studying the image of Mario and princess Peach. By the way I have no idea who is princess Peach until I've made this cake. When you asked me about Mario and the crews, all I know is Mario, Luigi and Yoshi. Mind you I always think Yoshi is the mushroom, even though we name our beloved cat Yoshi.
Anyway going back to the cake.... This cake is a white chocolate mud cake. I always fine it very challenging when making figurine, but I do enjoy it alot. To make the side of the cake, I want to make it like the actual Mario game.

Japanese theme cake

When you think of Japan you start to think of kimono, sushi, mt Fuji and cherry blossom. Our friend from church the Wong has dedicated themselves to go to Japan as a missionary. I was thinking what will make a good farewell cake for them something with a Japanese theme.
This cake is a greentea cake with a green tea Swiss meringue butter cream cover in fondant decorated with sugar cherry blossom.
